The cultivation of baby corn is fundamentally different from regular corn production, as the ears must be harvested when they are extremely young, typically just 2-3 days after the silk emergence. This narrow harvest window requires constant monitoring and rapid harvesting to ensure the characteristic tenderness and sweet flavor that makes baby corn such a prized ingredient in Asian cuisine and gourmet applications. Our farming partners use specially selected corn varieties that have been bred specifically for baby corn production. These varieties produce multiple ears per plant and have been selected for their uniform size, tenderness, and extended harvest period.
